Freshness and Quality
How fresh is your coffee?
We ship your coffee within 48 hours of roasting. We don't warehouse roasted coffee. We roast twice a week and what ships that day was roasted that morning. Most coffee you buy at grocery stores was roasted weeks or even months ago. Ours is measured in days, sometimes hours.
How long does roasted coffee stay fresh?
Coffee is at its peak 1 to 4 weeks after roasting. It's still very good for 4-8 weeks if stored properly. After that, it's drinkable but losing complexity. We recommend ordering every few weeks rather than stockpiling. For the best taste, fresh coffee has a short shelf life and is best consumed within a month of roasting.
How should I store my coffee?
Keep it in an airtight container away from light, heat, and moisture. Room temperature is fine. Some suggest refrigerating or freezing, but we prefer not to. We ship in resealable kraft bags that work well for short-term storage. If you want to get serious, use an opaque, airtight container. Freshness matters more than storage equipment.
Air Roasting
What is air-roasting?
Air-roasting or fluid bed roasting, uses pure heated air to roast coffee beans instead of gas-powered flames and rotating metal drums. Precisely controlled hot air lofts green coffee beans so they receive uniform heat application. The result is cleaner, brighter coffee with no burnt oils or bitter flavors.
Does air-roasted coffee taste different?
Air-roasted coffee tends to be cleaner, brighter, and more complex. You'll notice more pronounced origin characteristics: fruit notes in Ethiopian coffees, chocolate tones in Central American beans, and floral qualities in certain naturals. There's no burnt aftertaste or bitter oils masking the coffee's true character. If you're used to dark, heavy roasts from chain coffee shops, our coffee will taste noticeably different, lighter, more nuanced, more alive.
Is air-roasting better for the environment?
Air-roasting produces approximately 70% fewer carbon emissions than traditional gas-powered drum roasting. Our all-electric roaster uses clean energy rather than burning fossil fuels. It also produces less smoke and particulate matter, creating a cleaner roasting environment. We're not chasing certifications—we're making choices that align with how we want to operate.
